  • 1 tbsp (14g) unsalted butter * For the Creamy Tuscan Sauce:
  • 3 cloves garlic minced
  • 1/2 cup (1.2 dl or 85g) sun-dried tomatoes (drained of oil and chopped)
  • 1/4 cup (0.6 dl) vegetable or chicken broth (a splash of dry white wine)
  • 3/4 cup (1.8 dl) heavy whipping cream or full-fat coconut milk who prefer dairy-free product
  • 3 cups (7 dl or 90g) fresh baby spinach
  • 1/4 cup (0.6 dl or 25g) freshly grated Parmesan cheese
  • 1 tbsp fresh chopped parsley (For garnishing)
  • Lemon wedges For serving

    Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes | Servings: 4 ; Step 1: Flavoring the Salmon : Firstly Dry the Salmon fillet with a paper towel and season both side with Salt and Paper. Step 2: Cauterize the Salmon : Heat olive oil and butter in a large skillet over medium to high heat. Once the butter melted and bubbling, add the salmon fillets. Cook it for 4-5 minutes each side, or until it became golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate. Step 3: Aromatics: Use the same skillet and reduce the heat to medium. Add the minced garlic and sautΓ© for about 30 seconds until fragrant (always keep an eye on them do not let it burn). Step 4: Deglaze the pan: Stir in the sun-dried tomatoes, then pour in the broth or wine. Scrape up any flavorful browned bits from the bottom of the pan. Let it simmer for atleast 1-2 minutes until the liquid reduces slightly. Step 5: Make it creamy: Reduce the heat to low then Pour it in the heavy cream and bring to a gentle simmer, stirring occasionally. Step 6: Add greens and cheese: Stir in the fresh spinach and let it wilt in the sauce (about 1-2 minutes). Add the Parmesan cheese and stir until the sauce is smooth and the cheese has melted. Step 7: Combine and serve: Return the cooked salmon fillets to the skillet, spooning the creamy sauce over the top of each fillet. Let it simmer for another minute to heat the salmon through.
